Recipe(s) of the Week: Smoked Pork Belly Tacos and Hawaiian slaw

Ingredients:

  • Pork Belly with a Rub

  • Corn or flour Tortillas

  • Salt

  • Pepper

  • Jalapenos

    Slaw Sauce:

  • Red Cabbage

  • Green Cabbage

  • Carrots

  • Hot Honey

  • Siracha Sauce

  • Mayo


Instructions:

  1. Smoke a pork belly of your desired size until complete.

  2. Cut into small pieces and throw on the griddle to brown.

  3. Heat your corn or flour tortillas on the griddle.

  4. While your meat is being smoked, make Your coleslaw.

  5. In a large bowl, thinly cut and slice your purple and green cabbage as well as your carrots too.

  6. Add in five jalapenos diced.

  7. One whole pinapple sliced.

  8. Salt and pepper to taste.

  9. In a separate bowl, add in slaw dressing (honey, Sriracha sauce, mayo).

  10. Mix together to taste.
