Recipe(s) of the Week: Potato Latkes

You can't go wrong with Potato Latkes. Made iwth shredded potatoes, grated onion, and flour and egg binder. Pan-fry in batches until golden brown. These hot, crispy, oniony potato pancakes are perfectly acceptable for other times of the year. Serve with applesauce, sour cream, or smoked salmon. Farms2Table has been distributing many different types of potaoes throughout the season at all of our farmers market and prepackaged produce box solutions.


Potatoes are easy to grow and used in countless dishes year-round. Potatoess are high in starch, low in moisture, and have thick skins. They're fluffy when you cook them, so they're best baked or fried. This root vegetable have a descent source of fiber, which can help you feel full longer. Fiber also can help prevent heart disease by keeping your cholesterol and blood sugar levels in check. Potatoes are also rich in antioxidants that prevent diseases and vitamins that help your body function properly.
