Try this easy, delicious and of course healthy recipe. Sautee your eggplants, add pistachios to counter it with some saltiness and sweetness with pomegranates as your toppings. Lastly, crumble it with geta cheese. Pomegranates were offered all three of our 2nd Saturday Farms2Table farmers markets (Florence, Mesa and San Tan Valley). This fruit is high in vitamin C, Fiber, Folate, Manganese, Potassium and Thiamine.
