Recipe(s) of the Week: Eggplant Parmesan

Try this delicious recipe using eggplants Desert Farms2table distributed at all four Farms2Table farmers market and prepackaged produce box locations last weekend. If you've never had it, eggplant parmesan is an Italian dish made up of slices of eggplants coated in flower and breadcrumbs, then baked in layers of marinara and melted cheese. There are two methods to make this recipe - fried or baked. Frying the eggplant will mean using quite a bit of oil to brown the breaded eggplant. Baking the breaded eggplant on a tray in the oven requires a lot less oil, and is a bit healthier. Either way you go, the dish will be exceptionally scrumptious.


Eggplants are a good source of fiber, vitamins and minerals, also containing antioxidants. It can also help with digestion, weigh management, and heart health.
