Sauteed squash is just as good and healthy but at times it is ok to indulge yourself. Summer squash such as Gray, Yellow and Zucchini Squash are often fried, roasted or steamed and one of the most versatile types of produce. It is normally harvested when immature, during the summer spends more time on the vine during the winter. Squash are a good source of calcium, iron, magnesium, vitamin A and vitamin B6.
