Recipe of the Week: Zucchini Bread Jam


Would you like to try a recipe that has a flavor of classic Zucchini Bread but in the form of a spreadable jam? We think you will have fun making this preserve and eating it too. Desert Farms2Table rescued and distributed fresh zucchini squash at our Farms2table farmers markets last weekend while helping to supplement meals in Arizona communities. Zucchini also known as courgette, is a summer squash in the Cucurbitaceae plant family, along side melons, spaghetti squash and cucumbers. It can grow to more than 3 feet in length but is usually harvested when still immature typically measuring under 8 inches. Although it is considered a vegetable, it is botanically classified as a fruit. Zucchini contains many nutrients, as a result including it in your diet may have a variety of health benefits. It is high Vitamin A providing 40% of the reference daily intake supporting your vision and immune system.
