Recipe of the Week: Quick Pickled Cucumber Recipe


Canning is not for everyone, why not try this recipe using cucumbers or other vegetables you received from a Farms2Table farmers market and enjoy the refrigerator pickles the next day and store in a tight lid jar for up to 2 months.


Though commonly thought to be a vegetable, cucumber is actually a fruit. It is low in calories and contain a good amount of water and soluble fiber, making them ideal for promoting hydration and aiding in weight loss. Cucumbers are high in vitamin C and K along with minerals like copper, phosphorus, potassium and magnesium.
