Carrots are not just for your bunnies, it is highly nutritious delicious us too. Learn how to brine and make pickled carrots ready to eat within 12 hours. The longer you let it sit, the more flavorful it will be. Carrots are packed with carotene, fiber, vitamin K1, potassium and antioxidants. This vegetable is a weight-loss friendly food and have been linked to lower cholesterol levels and improved eye health. Carrots were first grown in Afghanistan around 900 AD. Orange may be their best-know color, but they also come in other hues, including purple, yellow, red and white. Carrots were offered at Casa Grande Farmers Market and Rainbow Valley Animal Rescue in Buckeye.
