Grill an easy but tasty summer side dish using yellow squash offered from one of our Farms2Table farmers market this past Saturday. Marinate it in lemon juice, white vinegar, fresh herbs and olive oil. Cook on a grill or stove top to tender.
Yellow squash is a summer squash belonging to the same family as zucchini. It is rich in fiber, vitamins A and C, and minerals like potassium. It is also 95 percent water making it a low calorie, low carb vegetable suitable for weight loss diets.
