Recipe of the Week: Easy Pickled Carrots

Do you still have carrots you received from Farms2Table's Casa Grande Farmers Market or at Rainbow Valley Animal Rescue in Buckeye? Why not try to pickle carrots and keep them for months. Eat them as a relish, throw them on a cheese board, add them to sandwiches or simply eat them right out of the jar. Takes 15 minutes to prep time, that is it. Carrots are an excellent sources of nutrients like potassium, antioxidants and vitamin A and among others.
