Recipe of the Week: Brussels Sprout Pickles


We were fortunate from our donor to rescue brussels sprouts and distribute at Riverview Elementary School last weekend. Brussels Sprouts are a member of the Brassicaceae family of vegetables and closely related to kale, cauliflower and mustard greens. This vegetable resembles mini cabbages and typically cut, cleaned and cooked to make nutritious side dish or main course. Brussels Sprouts are high in vitamin C and K including fiber and minerals.
