Recipe of the Week: No-Bake Blueberry Cheesecake

Use the Blueberries you received from your Farms2Table farmers market this past weekend and make a No-Bake Blueberry Cheesecake with a graham cracker crust for dessert in 40 minutes. Chill it in your refrigerator for 8 hours and serve it to your family or friends. Blueberries contain a plant compound called Anthocyanin giving it their blue color and many of their health benefits. One cup of blueberries provides 24 percent of a person's recommended daily allowance of vitamin C. It has been shown to protect against heart disease and cancer, and help maintain bone strength, mental health and healthful blood pressure. Use blueberries to top waffles, pancakes, yogurt, oatmeal, or cereal, blend them in a smoothie or syrup, or fold them in muffins and sweet breads.
